1 Bowl Vegan Lemon Loaf (Starbucks Copycat)


Vegan Lemon Loaf: perfectly moist, dense but not heavy like a good pound cake should be, finished with a sweet tart lemon drizzle. Tastes like Starbucks lemon loaf. Easy made in 1 bowl! It’s a must with a cup of tea!

To make vegan lemon loaf

Start by whisking wet ingredients for lemon loaf in a mixing bowl

Add dry ingredients to wet ingredients starting with the flour

Whisk the lemon loaf batter ingredients together until fully combined. Don't over mix

Pour lemon loaf batter into prepared loaf pan

Bake vegan lemon loaf at 350° until perfectly cooked and toothpick inserted comes out clean

Brush or drizzle the easy lemon glaze on the warm loaf

Remove lemon loaf from pan, cool completely. Slice and enjoy. Delicious for breakfast, brunch or dessert served with coconut whipped cream and strawberries- YUM!
