THAI CHOPPED SALAD

The savory peanut dressing is the perfect topping to this bright and crunch Thai chopped salad. 

Ingredients Needed:  – Tofu – Red bell pepper – Cucumber – Carrot – Green onion – Purple & green cabbage  – Cilantro – Cashews – Homemade Thai peanut dressing

STEP 1: 

Start by roasting the cubed tofu until golden brown in a baking sheet that has been lined with parchment paper. Once cooked, set aside. 

STEP 2: 

Next, you will toast the cashews for a few minutes until golden.  Then put into a food processor and pulse until they are smaller crumbs. 

STEP 3: 

While the tofu cooks, prepare the cabbge, cucumber, red pepper, carrot, and herbs.  Chop into bite sized pieces and set aside. 

STEP 4: 

Then, in a blender or large bowl, whisk the salad dressing together with peanut butter, sesame oil, soy sauce, sriracha, and spices.  

Pour the dressing over the layered vegetables and then toss to combine.  Serve this cold with tofu cubes and cashews on top for texture and added protein.
