VEGAN POWER BOWL

Update your lunch menu with this delicious nutrient dense power bowl. 

INGREDIENTS:  – Swiss chard – Sweet potato – Avocado – Fresh parsley – Chickpeas – Basmati rice (cooked) – Tahini – Lemon juice

STEP 1: 

Wash and peel the sweet potato then cut into 1/2" to 1" cubes.  Place on a baking sheet and roast until tender. 

STEP 2: 

Chop and cook the swiss chard until tender, then blanch in ice water and drain.  Set aside. 

STEP 3: 

If needed, cook the rice according to package directions.  Season with salt and pepper or soy sauce if desired. 

STEP 3: 

Whisk the tahini and lemon juice together to create a thick dressing for the power bowl. Taste and season to your preference. 

Layer the rice, swiss chard, sweet potato, chickpeas, and avocado slices.  Toss the mixture with the dressing before serving.
