Saute the onion and bell pepper in a large pot with oil. Once they’re soft, add the garlic. Add in the ground “beef” and cook until it’s browned all over.

Stir the rest of the “meat” sauce ingredients into the pot. Once it’s bubbling, lower the heat, cover with a lid, and let it simmer.

At this point, cook the spaghetti noodles according to the package instructions. Drain and set aside.

Taste the sauce and add more balsamic or sugar if needed. Scoop the vegan spaghetti sauce over the pasta in bowls, add vegan parmesan on top, and enjoy!
