Hearty Vegan Vegetable  Stew 


My Hearty Vegetable Stew is vegan, full of flavor, easy, healthy, gluten free and delicious! Winter root vegetables and beefy mushrooms in a rich savory broth simmered to perfection. Slow cooker option included.

How to make  vegetable stew

First, Saute onions with a pinch of salt and pepper and oil, use broth or water for oil free vegan stew.

Now add in the wine, beer, broth, fresh herbs, spices and rest of vegetables and stew ingredients

Bring the stew to a boil. Cover and reduce to a simmer until the veggies are tender.

Once the vegetables are tender puree a small portion of the stew then return back to the pot. This is to thicken the stew without using flour!

Season the veggie stew with salt and pepper to suit your taste buds

Ladle the veggie stew into bowls. serve with some warm crispy bread and vegan butter and enjoy! Total comfort food!
