Pesto Pasta with Cherry Tomatoes 


Pesto Pasta with Cherry Tomatoes is garden fresh! You’ll find vegan pesto-covered pasta layered with marinated cherry tomatoes (+ extra veggies) in every bite. It’s a quick dinner that’s bursting with color, flavor, and fresh herbs.

How to make  Pesto Pasta + Tomatoes

Cook the pasta and make the pesto. Cook the pasta in boiling water according to the package directions. While you wait, make the pesto sauce.

Marinate the tomatoes. Toss the cherry tomatoes in a bowl with olive oil, balsamic, and salt. Let them marinate for at least 20 minutes.

Roast the vegetables. Lay the chopped vegetables on a parchment-lined baking sheet. Pop them in the oven and let them roast.

Drain the cooked pasta and add it to a large bowl with the pesto, then toss them together. Scoop the pasta onto plates and top  some roasted vegetables and marinated tomatoes. Enjoy!
