Creamy Vegan Pumpkin Pasta Sauce


This Creamy Vegan Pumpkin Pasta Sauce is luscious, easy, and perfect for fall! The pumpkin sauce is easy to make in one pan, ready in less than 30 minutes. Serve with your favorite pasta noodles.

To make vegan pumpkin pasta sauce

Cook and drain noodles. Stirring in fresh spinach at the very end if you like. Set aside

For the pumpkin sauce. Saute onions in a sauce pan until soft and browning. Stir in garlic until fragrant.

Add water, pumpkin, tomato sauce and bouillon to the pan and simmer. Then stir in cashew cream

Add the pumpkin pasta sauce to your blender and puree until smooth.

Pour creamy pureed pumpkin sauce back into pot to heat up slightly and season with salt and pepper if necessary

Pour pumpkin sauce over cooked pasta noodles and toss it all together.

Serve Creamy Pumpkin pasta with vegan parmesan and or chopped tomatoes or nuts. Enjoy!
