Begin by heating a large pan over medium-high heat and adding vegetable oil. Add onions and peppers to the pan and stir constantly for 3 minutes.
Next, add sliced mushrooms and continue cooking and stirring for an additional 3 minutes.
Add broccoli florets to the pan and stir for 5 more minutes, then pour in chicken stock and beans, and cover the pan with a lid. Let the vegetable mixture steam for 5 minutes.
While the vegetables are steaming, prepare the simple sauce by mixing together water, soy sauce, cornstarch, agave, and rice vinegar in a separate bowl. After the vegetables have steamed, add garlic and chili to the pan and cook for 1 minute.
Pour the sauce mixture into the pan and cook for an additional 2 minutes, stirring well to incorporate all ingredients. Serve hot with rice or noodles.
