15 Minute Cowboy Caviar (aka Texas Caviar) is cross between a tomato salsa and a bean salad. It's crave worthy with a sweet & tangy Southwestern Vinaigrette Dressing. Perfect for Bbq or potluck!

Start by whisking together the ingredients for the Southwestern Vinaigrette in a small bowl and set aside

To make Cowboy Caviar

Then add black eyed peas, black beans, corn, Rotel tomatoes, peppers, onions, veggies, herbs to cowboy caviar salad bowl

pour dressing over beans and veggies in the cowboy caviar salad bowl

mix the cowboy salad together until well combined

Bring to a potluck and serve cowboy caviar with tortilla chips and watch it disappear Enjoy!!
