    15 Minute Cowboy Caviar also known as Texas Caviar is cross between a fresh tomato salsa and a bean salad. It’s super addicting with a sweet and tangy Southwestern Vinaigrette Style Dressing. A total winner for your next summer Bbq or potluck! Healthy, naturally Vegan and gluten free. Delish!

    Prepare to be wowed! You guys are going to love this Cowboy Caviar recipe, it’s so easy!! with black beans, corn, black eyed peas, Rotel tomatoes with green chilies, chopped peppers, red onion, fresh cilantro and the best zesty tangy southwestern style vinaigrette, made with fresh lime juice and zest, red wine vinegar, pickled jalapeño juice, sugar and spices

    It’s like a Mexican black bean and corn salsa/salad on steroids, lol! with lots of tasty crunchy veggies added.

    I like bringing this to potlucks, it’s so simple and inexpensive to make. People are always asking for the recipe. It’s great just as a salad or surround it with tortilla chips for tasty chips and dip! Either way once it hits that potluck smorgasbord it’ll disappear pretty fast!

    Great for a side salad or appetizer for dinner too!

    Perfect for special holiday get togethers like, Memorial Day, Canada day, Fourth of July, Cinco de Mayo, etc… or a fun anyday family and friends Bbq, potluck or picnic.

    There are a few names for this Cowboy Caviar: Texas Caviar, Cowboy Salsa, Southwestern Veggie Salad, Lone Star Caviar, Southwestern Bean Salad, Black Eyed Pea salad, Southern Caviar, Tex Mex Caviar, Hillbilly Caviar, and probably a few more…

    I’m most familiar with Cowboy Caviar. Hey call it whatever you want, a salsa or a salad, its delicious no matter what.

    How to make 15 Minute Cowboy Caviar:

    First whisk together the ingredients for the southwestern vinaigrette in a small bowl and set aside

    Now add the drained and rinsed beans and black eyed peas to a large salad bowl along with the corn, tomatoes and the chopped onions, veggies and cilantro.

    Pour the vinaigrette dressing over the top. Mix well and serve right away or chill in the fridge for 30 minutes and give it a mix before serving. Easy Peasy! Enjoy!

    Ingredients

    Cowboy Caviar Ingredients:

    • 1 can (15 oz) (540 ml) black beans, drained and rinsed
    • 1 can (15 oz) (540 ml) black eyed peas, drained and rinsed
    • 1 can (12 oz) (341 ml) corn, I like peaches and cream, (don't drain)
    • 1 can (10 oz) (284 ml) mild chopped tomatoes with green chilies, ( I like Rotel Brand)
    • 1/2 red pepper, diced
    • 1/2 yellow pepper, diced
    • 1/2 orange pepper, diced
    • 1/3-1/2 cup red onion, diced
    • 1/3-1/2 cup cilantro, chopped and loosely packed

    Southwestern Vinaigrette Dressing ingredients:

    • 1 tablespoon oil, I use grapeseed oil
    • zest of 1 lime
    • 2 tablespoons lime juice ( approximately 1 lime)
    • 2 tablespoons red wine vinegar
    • 2 teaspoons pickled jalapeño juice
    • 2 teaspoons sugar
    • 1 teaspoon Chili Powder
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon garlic salt (not powder)
    • 1/4 teaspoon onion powder
    • 1/4 teaspoon salt

    Instructions

    How to make 15 Minute Cowboy Caviar:

    1. First whisk together the ingredients for the Southwestern Vinaigrette in a small bowl and set aside
    2. Now add the drained and rinsed beans and black eyed peas to a large salad bowl along with the corn, tomatoes and the chopped onions, veggies and cilantro. Pour the vinaigrette dressing over the top.
    3. Mix well and serve right away or chill in the fridge for 30 minutes and give it a mix before serving. Easy Peasy! Enjoy!
    4. Yields 6-8 servings based on side salad portions

      Have yet to try, but sounds delicious! Are there any suggestions to substitute for pickled jalapeño juice, which I’m not sure I will be able to find?

        It's juice from a jar of pickled jalapeños usually found by the pickled vegetables. You could probably use dill pickle juice instead or any brine juice, banana peppers, etc,.. Hope you enjoy!
