VEGAN BBQ CHOPPED SALAD

Spicy BBQ sauce on chickpeas and a loaded salad create the perfect light dinner or lunch!

Ingredients Needed:  – Avocado – Tomatoes – Fresh parsley – Lettuce or mixed greens – Whole kernel corn – Chickpeas – BBQ sauce – Corn chips – Red onion – Vegan ranch

STEP 1: 

Start by cooking the chickpeas in BBQ sauce, thens et them aside.  While that heats, you will chop the vegetables into bite sized pieces. 

STEP 2: 

Assemble the salad in a bowl with layers of lettuce, tomato, avocado, onion, and corn. Then top with the cooked chickpeas in BBQ sauce. 

Serve this tasty salad as a meal or a side dish.  With plant-based chickpeas as the protein, it's ideal for everyone at your dinner table to devour!
