VEGAN BUFFALO "CHICKEN" SALAD

A simple salad is made even better with some buffalo "chicken" that is 100% plant-based!

Ingredients Needed:  – Lettuce – Tomatoes – Celery – Cucumber – Red onion – Carrots – Cashews – Dijon mustard – Lemon juice – Water – Herbs and spices – Vegan buffalo chicken

STEP 1: 

Prepare the vegan chicken wings as directed on the package or with a recipe of your choice.  Let them cool, then cut into small bites.

STEP 2: 

While those cook, add the water and cashews to a saucepan and cook for 10-minutes.  Drain, then add to blender with remaining ingredients and blend.

STEP 3: 

Then, prepare the salad greens.  Slice or chop the tomatoes, cucumbers, celery, onion, and grate the carrots. 

Toss the ingredients together with the buffalo "chicken" and homemade cashew dressing.  Serve chilled and enjoy!
