COLD SOBA NOODLE SALAD

Tender soba noodles, a rich peanut sauce, and fresh crisp veggies make an ideal side dish or light lunch!

Use mis en place to prepare your ingredients befor eyou begin cooking. This saves tons of time and makes assembilng easier than ever!

STEP 1: 

Cook the soba noodles for 5 minutes, drain, rinse, and dunk into ice water.  When cooled, drain and drizzle with sesame oil and toss then set aside. 

STEP 2:

While that cools, you can whisk up your sauce or dressing.  This chili sauce and peanut butter combination is hot, sweet, and savory!

STEP 3:

Pour the sauce onto the cooked pasta and toss until it is all coated well.  This sauce is thick, but should be just enough to coat all of the pasta. 

STEP 4:

Lastly, add in the fresh sliced vegetables and fresh herbs.  Toss and taste.  If needed add additional chili sauce or sesame seeds. 

Serve this alone or with crispy tofu for lunch, as a side dish, or even brunch!  You'll love the bright flavors of this veggie-laden dish!
