VEGAN COPYCAT CRUNCHWRAP

A simple vegan cheese sauce makes these the perfect copycat of your favorite fast food treat!

INGREDIENTS NEEDED:  – Potato – Carrot – Nutritional yeast – Coconut milk – Salt – Turmeric – Onions – Vegan "meat" – Taco seasoning – Tortilla chips – Flour tortillas – Taco toppings

STEP 1: 

Start by boiling the potatoes, carrots, and cashews for the base of your vegan cheese sauce.  This should take 10 to 15 minutes.

STEP 2: 

Drain this and pour into a blender with the spices and nutritional yeast.  Pulse until a thick cheese sauce is made. 

STEP 3: 

Now you will add the onions and vegan meat crumbles to a skillet with the taco seasoning and cook for 3 to 4 minutes, or until the onions are tender. 

STEP 4: 

Assemble by layering the "meat", cheese sauce, chips, and toppings on the center of a tortilla.  Fold and brown in a skillet. 

Serve with vegan sour cream, salsa, guacamole, or hot sauce.  You can even customize this with a layer of refried beans alongside the "meat".
