This is a simple, yet beautifully flavored pasta dinner. It captures the flavors of the Middle East and the Mediterranean by combining creamy pasta with tangy vegetables and pesto.
These are the ingredients you need:
- Pasta - Both short and long cut pasta noodles will work well. The more ridges on the pasta, the more sauce you’ll scoop up with every bite!
- Hummus - Upgrade this dish by using a flavored hummus, such as roasted garlic, roasted red pepper, or sun dried tomato. If you have the time, make a batch of homemade hummus instead. It’s packed full of garlicky, nutty flavors you can’t usually find in the storebought stuff.
- Mediterranean vegetables - Like cherry tomatoes, marinated artichokes, cremini mushrooms, and garlic.
- Vegan pesto - Stirring in a few tablespoons of vegan basil pesto enhances the herbaceous notes while reminding you of this dish's Mediterranean roots.
- Italian seasoning - A pre-mixed dry blend is easiest.
How to make hummus pasta
- Roast the vegetables: Toss the tomatoes, mushrooms, artichokes, and garlic together with the Italian seasoning, salt, pepper, and olive oil in a baking dish. Make a well in the center and add the hummus and pesto (do not mix). Roast in the oven.
- Cook the pasta: Cook the pasta in a pot of boiling water while you wait on the veggies. Save about 1 cup of pasta water, then drain the rest once the pasta is al dente.

Ingredients
For hummus pasta:

12 oz dry pasta, any kind- penne, spaghetti etc,..(gluten free if needed)

16 oz cherry or grape tomatoes (about a pint and ¼)

1- 6 oz jar marinated artichokes, drained and rough chopped

2 cups cremini mushrooms, quartered
-
½ teaspoon italian seasoning
-
2 to 4 cloves garlic, chopped
-
1 tablespoon olive oil
-
1 cup hummus (see notes)
-
4 tablespoons vegan basil pesto
-
¼ to 1 cup or so reserved pasta water (if needed)

Salt and cracked black pepper
For serving (optional)

Lemon wedges

Chopped fresh basil

Pinch of Red chili flakes
Instructions
- Preheat the oven to 400°. Add the tomatoes, mushrooms, artichokes, chopped garlic, Italian seasoning and a good pinch of salt and pepper to a 8 X11 baking dish and toss with the olive oil.

Make a well in the center and add the hummus and pesto. Do not mix! Bake for 35 minutes uncovered.

While veggies are roasting, cook pasta according to directions in salted boiling water. Drain, do not rinse and toss with a good drizzle of olive oil. Set aside.

Remove the casserole dish from the oven and gently mash tomatoes with a fork, then mix everything together to create a sauce. Toss in the pasta and drizzle in the reserved pasta water a little at a time if needed to loosen the sauce and coat the pasta. Season to taste with salt and pepper if necessary.
