FRIED POTATO TACOS

Serve these tacos with a simple vegan crema sauce for a perfect weeknight meal. 

INGREDIENTS NEEDED:  – Vegetable oil – Potatoes – Nutritional yeast – Chili powder – Paprika – Ground cumin – Salt – Garlic powder – Coconut cream – Tortillas

STEP 1: 

Peel and dice the potatoes, then boil until tender.  Drain them, and pour into a large bowl. 

STEP 2: 

Mash the potatoes with the seasonings and nutiritonal yeast as directed.  Season to taste.  Add vegan cheese if desired. 

STEP 3: 

Spread the potato mixture over 1/2 of the tortilla.  Fold over then fry in a pan for 2 to 3 minutes per side until browned.

Serve the tacos with a drizzle of crema and fresh chopped cilantro.  Add vegan cheese if desired before frying.
