100% VEGAN CHEESY SCALLOPED POTATOES

A simple homemade sauce takes potatoes to a new level in this easy to assemble vegan scalloped potatoes dish.

INGREDIENTS:  – Olive oil – Potatoes – Onion – Shallot – Garlic – Thyme – Rosemary – Non-dairy milk – Flour – Vegan cheddar cheese – Salt – Black pepper

STEP 1: 

Wash and slice the potatoes into thin rounds.  This is made easy with a mandolin slicer but can be done by hand. 

STEP 2: 

In a saucepan, saute the vegetables until tender.  Then add flour and cook 1 minute.  Gradually stir in non-dairy milk. 

STEP 3: 

Simmer until thickened, then add in vegan cheese.  Stir until it is melted and a thicky sauce is made. Taste and season. 

STEP 4: 

Now you will assemble the casserole.  Layer potatoes, then sauce, then potatoes, 2 to 3 times.  Top with additional vegan cheese and bake.

This easy casserole is the perfect side dish for any weeknight meal, but ideal for sharing at holiday gatherings.  Rich, flavorful, and 100% vegan!
