NO MAYO VEGAN POTATO SALAD

This rich and creamy potato salad is packed with freshness and a perfect BBQ side!

Ingredients Needed:  – Potatoes – Avocado – Cucumber – Fresh dill – Red onion – Lemon juice – Apple cider vinegar – Yellow mustard – Salt – Black pepper – Celery

STEP 1: 

Start by making a simple avocado sauce to dress the salad with.  Mash or puree, and set aside until ready to make the salad.

STEP 2: 

Then, you will cut and boil the potatoes until tender.  Do not mash them.  Drain and pour into a large mixing bowl. 

STEP 3: 

While the potatoes cook, slice the cucumbers, dice the onion, and dice the dill.  Set these aside until later. 

STEP 4: 

combine all ingredients in a large bowl and toss until the sauce has coated the potatoes well.  Chill until ready to serve. 

You'll love the richness that the avocado adds to the recipe, and the fresh dill and red onion will be perfect for making this salad shine.
