LENTIL ENCHILADAS

Savor the classic Mexican flavor but stay vegan with this easy lentil enchilada recipe!  

INGREDIENTS NEEDED:  – Lentils – Onion – Carrot – Bell pepper – Chili – Tomatoes – Garlic – Brown sugar – Herbs & spices – Broth – Enchilada sauce

STEP 1: 

In a skillet over medium heat, add the olive oil, onions, and peppers.  Saute for 5 minutes, then add the garlic and spices.  Cook for 1 minute. 

STEP 2: 

Add the lentils, tomatoes, and broth.  Stir to combine, and let simmer, stirring regularly, for 40 to 45 minutes

STEP 3: 

When the filling is done, divide it among the tortillas and roll. Place them seam side down in the baking dish. 

STEP 4: 

Cover with enchilada sauce then bake for 20 minutes.  Serve this topped with vegan cheese, avocado, green onions, and chili peppers. 

This easy vegan enchilada dish is sure to be a hit with everyone at your dinner table.  Tasty and 100% plant based!
