VEGAN TUNA PASTA SALAD

You are sure to love the combination of fresh flavors in this easy pasta salad with vegan tuna. 

Ingredients Needed:  – Pasta – Chickpeas – Celery – Red bell peppers – Red onion – Peas  – Dill – Vegan yogurt – Vegan mayo – Lemon juice – Pickle brine – Dijon mustard – Garlic powder – Salt & pepper

STEP 1: 

Cook the pasta according to package directions.  Rinse and drain, then set aside until you are ready to assemble the salad. 

STEP 2: 

Prepare the vegetables while the pasta cooks.  Dice the celery, red onion, red peppers, and any fresh herbs you plan to use. 

STEP 3: 

Rinse and drain the chickpeas, then use a fork to mash them until they are small and flaky.  This gives you the "tuna" texture. 

STEP 4: 

In a bowl, whisk together the vegan yogurt, vegan mayo, mustard, and spices to create a bright and tasty dressing for the salad. 

STEP 4: 

When ready to serve, layer all of the ingredients together and drizzle with the dressing.  Toss to coat before serving. 

This salad is best served chilled and can be stored in the refrigerator for up to 4 days.  Add additional fresh herbs and toss lightly before serving.
