SESAME QUINOA SALAD

You will love how easy this is to make and the bright flavors perfect for a lunch!

INGREDIENTS:  – Red cabbage – Green onion – Bell pepper – Cucumber – Carrot – Fresh parsley – Quinoa  – Sesame ginger dressing

STEP 1: 

Cook the quinoa according to package directions.  Season with salt and black pepper and then fluff and set aside.  

STEP 2: 

Wash and chop the vegetables into bite sized pieces.  Carrot, cucumber, bell pepper, cabbage, and green onion. 

STEP 3: 

IN a blender, pulse the dressing mixture until smooth and creamy.  Taste and add seasoning if needed. 

Layer the quinoa and vegetables and then drizzle with dressing.  Toss to combine before serving. Store leftovers up to 4 days.
