LENTIL CHICKPEA PROTEIN SALAD

This easy protein salad is a perfect meal for lunch or dinner. Packed with flavor and nutrients!

INGREDIENTS:  – Chickpeas – Lentils (brown or green) – Pine nuts – Red onion – Bell pepper – Cucumber – Tomato – Pickled beets – Basil – Mint

STEP 1: 

Start by cooking the lentils until tender.  Season as desired then set them aside until ready to serve. 

STEP 2: 

In a small skillet, toast the pine nuts over medium heat until just beginning to brown .Stir and make sure not to burn. 

STEP 3: 

Prepare all of the vegetables by cutting into bite-sized pieces.  Avocado, bell pepper, onion, tomato, beets, and cucumber. 

STEP 4: 

Whisk together the dressing ingredients in a bowl or jar.  Taste and add more salt and pepper if needed. 

Layer the lentils, chickpeas, pine nuts, and vegetables together then toss with the dressing before serving.
