TOFU MEDITERRANEAN SALAD

A bright and tasty salad with rich Mediterranean flavors is the perfect addition to your menu.

Ingredients Needed:  – Cornstarch – Olive oil – Herbs & spices – Balsamic vinegar – Tofu – Potatoes – Lemon – Cucumber – Cherry tomatoes – Red onion – Garlic clove – Salad greens – Hummus

STEP 1: 

Begin by preparing the potatoes.  Cover in water and salt generously, then boil for 15 to 20 minutes, until fork tender.  Drain and set aside. 

STEP 1: 

While the potatoes cook, toss the tofu with the herbs and spices, and oil.  Stir until coated. 

STEP 1: 

Lay the tofu and potatoes on a lined baking sheet.  Smash down the potatoes with a glass, then squeeze lemon over all.  Bake until golden.

STEP 1: 

While the potatoes and tofu roast, combine the cucumber, tomato, and onion with oil. Toss together and set aside.

Layer the lettuce with fresh vegetables, tofu, and potatoes then top with hummus before serving this tasty salad.
