VEGAN CAESAR SALAD WRAP

The perfect light and refreshing lunch packed with protein! A tasty Caesar salad wrap!

INGREDIENTS:  Soaked cashews, lemon juice, soy sauce, miso paste, mustard, garlic, capers, tofu, lettuce, soy milk, breadcrumbs,and oil

STEP 1: 

Soak the cashews overnight then drain and add to a blender with lemon juice, soy sauce, miso paste, mustard, garlic, and capers. 

STEP 2: 

Cube the tofu, then dip into soy milk and dredge in breadcrumbs.  Fry for 2 to 3 minutes per side, until brown and crispy. 

STEP 3: 

Toss the lettuce, tofu, croutons, and dressing together until it is well combined.  Add more vegetables if desired. 

STEP 4: 

Add salad mixture to a tortilla and wrap.  Use one large or 2 small overlapping tortillas. Tie with string to secure until serving.

These wraps are a great and easy option to make for lunches throughout the week.  Add any favorite protein in place of tofu if desired.
