VEGAN CHEESY FIESTA POTATOES

A classic appetizer or side dish is now vegan with a homemade cheese sauce and a bit of vegan sour cream!

INGREDIENTS NEEDED:  – Potatoes – Onion powder – Garlic powder – Salt – Paprika – Chili powder – Cayenne pepper – Olive oil – Cornstarch

STEP 1: 

Start by whisking together the onion powder, garlic powder, salt, paprika, chili powder, and cayenne together.  Set aside. 

STEP 2: 

Then wash and put your potatoes into a large stockpot. Cover with water and salt the water generously.  Bring to a boil then cook for 20 to 30 minutes until fork tender.  

STEP 3: 

Drain the potatoes and pour into a bowl to combine with the olive oil, cornstarch, and seasoning mixture.  Toss until coated. 

STEP 4: 

Spread the potatoes onto a baking sheet and press down with a glass.  Then roast for 20 minutes until golden brown and crispy. 

INGREDIENTS NEEDED:  – Non dairy milk – Vegan cheese  – Vegan butter – Flour – Chili powder – Ground cumin – Cayenne pepper – Salt – Black pepper

STEP 4: 

In a skillet, make a roux with vegan butter and flour. Season then whisk in milk.  Add in vegan cheese and cook until melted and thick. 

Serve the fiesta potatoes with vegan cheese, vegan sour cream, chives, or any other preferred nacho toppings!
