GOLDEN GODDESS SALAD

Packed with protein and warm flavors, this is the ideal addition to your weekly meal plan. 

INGREDIENTS:  – Quinoa – Turmeric – Butternut squash  – Bell pepper – Carrots – Zucchini  – Chickpeas  – Olive oil  – Salt and black pepper – Dijon mustard – Tahini – Lemon juice

STEP 1: 

Add the turmeric and quinoa to water and bring to a boil.  Cook as directed, then remove from heat and fluff with a fork.  Set aside. 

STEP 2: 

Slice all of the vegetables then lay them on a baking sheet and drizzle with oil, salt, and pepper.  Roast until tender. 

STEP 3: 

Whisk the dressing together and taste.  Add more seasoning if needed then set it aside until ready to assemble and serve. 

Layer the quinoa, roasted vegetables, corn, chickpeas, and dressing in a bowl with the dressing.  Toss to coat before serving.
