MUSHROOM STROGANOFF

Make a rich mushroom stroganoff to serve over pasta or rice for a filling and vegan meal everyone loves!

INGREDIENTS NEEDED:  Onion, garlic, oyster mushrooms, cremini mushrooms, oil, vegetable broth, soy milk, flour, nutmeg, vegan mozzarella or cheddar, salt, pepper, and fresh thyme.

STEP 1: 

In a large skillet, begin by sauteing the onions until tender. Stir regularly, just until they are softened and starting to brown. 

STEP 2: 

To the skillet, add the mushrooms and cook for 5 minutes, or until browned and reduced.  Season with salt and pepper. 

STEP 3: 

Add flour to the mushrooms and stir until they are coated.  This will help thicken the sauce.  Add garlic and saute. 

STEP 4: 

Then stir in the broth and soy milk.  Stir, and then simmer until it begins to thicken.  Make sure to keep it over low heat to not burn. 

STEP 5: 

Now, stir in the vegan shredded cheese until melted.  Mozzarella or cheddar flavor work best.  You could also use a vegan cream cheese. 

Serve your mushroom stroganoff over rice, potatoes, or pasta.  Sprinkle the top with fresh parsley before serving.
