VEGAN LENTIL STEW

You won't miss the meat with this hearty stew filled with flavor.  Protein packed from lentils and mushrooms in every bite.

INGREDIENTS NEEDED:  – Olive oil – Lentils – Shallot – Carrot – Garlic – Mushrooms – Vegetable stock – Nutritional yeast – Fresh thyme – Cornstarch – Vegan butter – Soy milk

STEP 1: 

Start by heating oil and a bit of vegan butter in a deep skillet.  Add the carrots and onions, and cook until tender. 

STEP 2: 

Add in the mushrooms and cook until reduced and browning.  Then, add garlic and cook another minute. 

STEP 3: 

Stir in seasonings, cornstarch, and lentils.  Cook for 1 to 2 minutes before adding in the vegetable broth, then simmer. 

STEP 4: 

Once the lentils are tender and the stew is fully cooked, you can add vegan butter and soy milk for extra creaminess. 

This lentil stew is great by itself or served over potatoes, rice, or pasta.  Top with fresh chopped parsley and enjoy!
