SUMMER SALAD WITH FARRO

A refreshing lunch comes with tons of vibrant fruit and vegetables and hearty farro for fulfilling carbs in every bite. 

Ingredients Needed:  – Greens – Farro – Strawberries – Red onion – Cucumber – Avocado – Vegan feta – Homemade poppy seed dressing

STEP 1: 

Prepare the farro according to directions.  Season as desired with salt, pepper, and herbs.  Use vegetable or mushroom broth for more flavor.

STEP 2: 

While the farro cooks, prepare the vegetables and fruit. Slice cucumbers, avocado, red onion, and strawberries.  Rinse and dry the greens. 

STEP 3: 

In a bowl or measuring cup, whisk the dressing together with oil, yogurt, poppy seeds, herbs, and spices. 

STEP 4: 

Assemble the salad with a base of spinach and arugula.  Top with chopped vegetables, fruit, and farro then drizzle with dressing before serving.

If making in advance, I recommend storing the greens, fruit, farro, and veggies separately and then assemble and dress just before serving.
