GREEK TORTELLINI PASTA SALAD

A simple pasta salad is elevated with fresh vegetables and a simple homemade vegan dressing. 

Ingredients Needed:  – Cucumber – Tortellini – Kalamata olives – Vegan feta – Cherry tomatoes – Roasted red bell peppers – Asparagus – Vinegar & oil – Seasonings – Lemon juice – Dijon mustard

STEP 1: 

Cook the pasta according to package directions.  Rinse and drain, then set aside until you are ready to assemble the salad. 

STEP 2: 

Season and grill the asparagus until it is tender but not mushy.  Remove and cut into bite-sized pieces then set aside. 

STEP 3: 

While the pasta and asparagus cook, you will cut the tomato, cucumber, and roasted peppers into small pieces.  Set aside to assemble later. 

STEP 4: 

Combine the olive oil, vinegar, salt, pepper, mustard, and garlic powder together for a quick and easy dressing. Whisk until combined. 

Layer everything into a large bowl and drizzle with dressing.  Toss together before serving.  If storing for later, keep the vegetables and pasta separate until ready to eat.
