WHITE LASAGNA SOUP

A simple cashew cream added to a flavorful broth creates the perfect vegan soup with all of the richness you desire. 

INGREDIENTS NEEDED:  – Vegetable broth – Nutritional yeast – Garlic – Lasagna sheets – Olive oil – Onion – Lemon juice – Italian seasoning – Agave syrup – Salt – Black pepper

STEP 1: 

Soak the cashews overnight and the pulse into a cream sauce as directed.  Set this aside to add to the soup later. 

STEP 2: 

Start by cooking down the onion and garlic until tender and aromatic.  Stir regularly and do this over low heat so you do not burn the garlic. 

STEP 3: 

Then add in the broth, spices, herbs, and nutritional yeast.  Stir this mixture and let it simmer for 2 minutes. 

STEP 4: 

Next, mix in the cashew cream you made earlier.  Taste and season with additional salt and pepper.  Let this simmer for a few minutes. 

STEP 5: 

Break up the lasagna sheets or pasta and stir into the soup.  Let it continue cooking for 5 to 6 minutes, or until the pasta is just done. 

Top the lasagna soup with freshly cracked black pepper and fresh herbs. Serve alone or with a side salad.
