QUINOA AVOCADO SALAD

Served with a simple lemon dressing, this is refreshing and nutritious. 

INGREDIENTS:  – Quinoa – Cucumber – Tomatoes – Avocado – Mixed greens  – Sesame seeds – Lemon Dressing

STEP 1: 

Cook quinoa according to package directions, seasoning the water with turmeric.  Fluff and set aside. 

STEP 2: 

Wash and peel the vegetables as desired.  Cut the tomato and cucumber into chunks and slice the avocado. 

STEP 3: 

Whisk together the lemon dressing until it is well combined.  Taste and season if needed.  You may also use a ready-made dressing.

Assemble the salad and toss with the dressing to coat.  Add toasted sesame seeds for texture and protein if desired.
