Mexican Tater Tot Casserole (Vegan)

Description

This vegan tater tot casserole is packed with Mexican-inspired ingredients and smoky flavors. It tastes like a taco, but is as easy and quick as any other casserole!


Ingredients

Scale
  • 1 medium yellow onion, diced

  • 1 tablespoon olive oil

  • 3 cloves garlic, chopped

  • 1 -12 oz package vegan ground beef, like beyond meat, impossible meat, etc,..

  • 1 package taco seasoning mix (about 3 tablespoons)

  • 1 cup red enchilada sauce 

  • 1/2 cup salsa

  • 1 -4 oz can diced green chilies

  • 1 -12 oz can corn

  • 1 -19 oz can black beans, rinsed and drained

  • 1 -7 oz bag vegan cheese threads, any flavor (about 3 cups) 

  • 5 cups or so of frozen tater tots, approx. 28 oz bag (800 grams)

Toppings (optional but recommended)

  • 1/2 cup sliced black olives

  • 1/2 cup chopped fresh cilantro

  • 1 tomato, chopped

Notes

  • More topping/serving ideas: vegan sour cream, sliced avocado, shredded lettuce, salsa
  • Store: The leftover casserole can be stored in the baking dish, covered or in individual airtight containers in the fridge for up to 4 days. 
  • Freeze: I haven’t tested it, but the baked casserole should freeze well for about 1 month. Just reheat it in the oven right from frozen until it’s warmed through and the tater tots are crisp again.
