Instructions
- Preheat oven to 375° Grease a 9x13 casserole dish
- In a large nonstick skillet/pan over medium heat saute the onions and oil with a pinch of salt and pepper for 3-5 minutes until softening. Add in the garlic and vegan ground beef, break apart with a wooden spoon as it cooks, about 5-6 minutes.
- Stir in the taco seasoning and the rest of ingredients except the cheese and potatoes. Simmer for 3-5 minutes to thicken a bit.
- Pour the ‘beef’ mixture into the prepared casserole dish. Spread the cheese evenly over the top. Followed by a layer of tater tots.
- Bake for 45 minutes. Broil for 3-5 minutes for golden brown top. Add your desired toppings. Enjoy! Step by step photos and more in above post.
Notes
- More topping/serving ideas: vegan sour cream, sliced avocado, shredded lettuce, salsa
- Store: The leftover casserole can be stored in the baking dish, covered or in individual airtight containers in the fridge for up to 4 days.
- Freeze: I haven’t tested it, but the baked casserole should freeze well for about 1 month. Just reheat it in the oven right from frozen until it’s warmed through and the tater tots are crisp again.
