ARUGULA SALAD WITH BEETS AND QUINOA

This simple arugula salad is perfect for your weekday lunch. Flavorful, nutritious, and easy to prepare. 

Ingredients Needed:  – Water or broth – Quinoa – Salt – Beet, red onion, and cucumber – Sunflower seeds – Avocado oil – Apple cider vinegar – Dijon mustard – Maple syrup

STEP 1: 

In a saucepan, combine water or broth with the quinoa and salt.  Bring to a boil and cook until the liquid has evaporated. Fluff with a fork. 

STEP 2: 

Slice the cucumber and onions.  Then, grate a steamed beat into small pieces.  Set aside until the quinoa is done cooking. 

STEP 3: 

Whisk together the dressing.  Taste and add more seasonings if needed.  This can be refrigerated until ready to serve. 

STEP 4: 

Layer the greens, beets, cucumber, onions, and quinoa on a plate.  Drizzle with the dressing and toss before serving. 

Serve this comforting meal by itself or alongside a favorite grilled vegan protein for a tasty meal that is delicious and easy to prepare.
