BUFFALO CHICKPEA VEGAN TAQUITOS

The ideal game day food that everyone will beg you to bring to any event!  

– 1 onion – 1/2 bell pepper, – 2 garlic cloves – 14 oz chickpeas – 1 2/3 cup tomatoes – 1 tbsp hot sauce – 3 tbsp almond milk – 1 tbsp brown sugar – 1 tsp ground cumin – 9 corn tortillas

STEP 1: 

Saute the onion and bell pepper until tender.  Then, add in the garlic and cook until just aromatic. 

STEP 2:

Then add in the sauce, milk, and spices.  Stir this mixture together and let it simmer to combine flavors.  

STEP 3:

Mash the chickpeas and then mix them into the sauce.  Make sure everything is combined well, taste, and add more hot sauce if desired. 

STEP 4:

Spread a heaping tablespoon or two onto a tortilla, and then roll.  Place these seam side down on the baking sheet, then brush with oil before baking.

Serve these spicy taquitos with a favorite creamy vegan dipping sauce such as vegan sour cream, vegan ranch dressing, or a vegan blue cheese dip!
