CHICKPEA & CORN VEGAN PATTIES

Make a loaded chickpea and corn fritter with a few basic ingredients for a savory appetizer or starter. 

INGREDIENTS NEEDED:  There are 3 recipes within this for patties, aioli, and salad.  Ingredients include items such as spices, chickpeas, corn, breadcrumbs, salad greens, herbs, and vegan mayo.

STEP 1: 

Add everything except the corn and breadcrumbs for the patties into a food processor.  Pulse until a thick paste forms and the chickpeas are pureed. 

STEP 2: 

Pour the chickpea mixture into a glass bowl, then stir in the corn and breadcrumbs until you have a thick mixture that will form patties.  

STEP 3: 

With clean hands, form the mixture into 12 patties.  Place these on a parchment lined baking sheet and sprinkle with paprika.  Then freeze for 20 minutes. 

STEP 4: 

While the patties are in the freezer, you will make the aioli as well as the salad and dressing.  Once these are done, set aside until after you cook the patties. 

STEP 5: 

Fry the patties in a bit of oil for 2 to 3 minutes per side, until heated through and golden brown.  

Serve these crispy chickpea and corn fritters with the dipping sauce as an appetizer, or alongside a salad for a full meal!
