CHOCOLATE CHIP VEGAN MUFFIN

This vegan muffin recipe is ideal for your chocolate cravings! Deliciously filled with chocolate in every bite!

This recipe focuses on using pantry staples to build a delicious soft muffin.  Bananas, applesauce, chocolate chips, and almond milk are all you need beside pantry supplies!

STEP 1: 

Whisk the dry ingredients and set them aside.  Then, combine the almond milk and vinegar together to curdle.  Whisk in the oil and set it aside. 

STEP 2:

In a large bowl, mash the bananas.  Then, combine them with the applesauce and milk mixture. Beat until smooth. 

STEP 3:

Carefully stir in the dry ingredients.  Then, fold in the chocolate chips.  Be careful to not overmix the ingredients. 

STEP 4:

Scoop into a prepared muffin tin and bake for 22 to 25 minutes until they have risen and are golden brown.  Use a toothpick in the center to check for doneness. 

Serve these vegan muffins with coffee or tea for a tasty snack or easy breakfast.  They are ideal warmed with a bit of vegan butter!
