VEGAN GREEK QUINOA SALAD

Make this bright and refreshing salad as a perfect start to a meal or an entree you will love. 

Ingredients Needed:  – Tomatoes – Cucumber – Red onion – Parsley – Quinoa – Chickpeas – Vegan feta –Olives – Vnegar – Olive oil – Dijon mustard – Spices

STEP 1: 

Cook the quinoa according to directions.  Once it is done, fluff with a fork and season as desired.

STEP 2: 

While the quinoa is cooking, you will prepare the vegetables and herbs. Cut them into bite-sized pieces. 

STEP 3: 

In a bowl, whisk together the oil, vinegar, mustard, and spices to create a simple Greek dressing. 

STEP 4: 

Layer the ingredients in a large bowl and drizzle with the salad dressing.  Toss until the quinoa and vegetables are coated before serving. 

This salad is a great side dish or simple lunch when served with grilled or air fryer tofu pieces.  Store leftovers in the refrigerator.
