AVOCADO QUINOA SALAD

Packed with protein, this avocado quinoa salad is a perfect hearty lunch with a peppy mustard dressing.

Ingredients Needed:  – Quinoa – Tomato – Carrot – Mixed greens – Avocado – Hummus – Olive oil – Dijon mustard – Vinegar

STEP 1: 

Begin by making the quinoa.  Fluff with a fork then season to taste and set this aside. For added flavor, cook in vegetable or mushroom broth. 

STEP 2: 

While the quinoa cooks, prepare the vegetables.  Slice the tomato and avocado.  Then, slice the carrots or chop into tiny pieces.  

STEP 3: 

Whisk together the mustard, oil, and lemon juice together until combined.  Taste and add additional lemon, salt, or pepper if desired. 

This tasty pasta salad is packed with bright flavor, textures, nutrients, and protein.  A perfect choice for a side dish or a plant based meal.
