RED LENTIL DAHL VEGAN MEAL

Soak the lentils ahead of time and you can have this meal on the dinnertable in under 30 minutes! A perfect weeknight dish. 

INGREDIENTS NEEDED:  – Oil – Onion – Garlic – Ginger – Curry spices – Red lentils – Tomatoes – Vegetable stock – Coconut milk – Lime – Cilantro

STEP 1: 

Start by sauteeing onion in oil over medium heat.  Once tender, add in the fresh garlic and fresh ginger.  Cook for 1 minute until fragrant. 

STEP 2: 

Add the lentils, curry powder, turmeric, cumin, and coriander to the dish and stir to combine.  Once aromatic add tomatoes and broth. 

STEP 3: 

Let the lentils simmer for around 10 minutes, or until they are tender.  If not tender, continue cooking in 2 minute increments. 

STEP 4: 

Add the coconut milk and bring the dahl to temperature.  Stir well, taste, and add more seasoning if needed.  

Serve red lentil dahl over rice or cauliflower rice.  It's protein-packed and an ideal main course, but can also be served as a side with other curry dishes.
