THAI SPICY PEANUT RAMEN

Update ramen to become a whole new world of flavor with this naturally vegan recipe!  Peanut butter and chile combine perfectly!

INGREDIENTS NEEDED:  – Ramen noodles – Vegetable broth – Coconut milk – Olive oil – Garlic – Fresh ginger – Green curry paste – Peanut butter – Agave syrup – Soy sauce – Lime juice

STEP 1: 

Begin by sauteeing garlic and ginger in a wok until aromatic.  Then add in the green curry paste and heat through. 

STEP 2: 

Next, whisk in the coconut milk and broth.  Stir until combined, then simmer over low heat until just starting to bubble. 

STEP 3: 

Now, you will whisk the sauce ingredients together in a bowl, incorporating the peanut butter until smooth.  Then add this to the broth in the wok. 

STEP 4: 

Add the ramen and simmer for 4 to 7 minutes, just until the noodles are tender.  Taste and add additional seasoning if needed.

Top your ramen with sesame seeds, fresh sliced chili, lime wedges, mushrooms, or any other classic toppings you prefer.
