EASY SALAD WITH VEGAN CAESAR

A simple sunflower seed Caesar dressing adds rich creamy flavor to this simple salad. 

Ingredients Needed:  – Parsley – Red bell pepper – Head of lettuce – Tomato – Cucumber – Sunflower seeds – Lemon juice – Dijon or whole-grain mustard – Capers – Garlic powder – Pink salt – Water

STEP 1: 

Boil the sunflower seeds and water for 5 minutes.  Then add them and the rest of the ingredients to a blender and pulse until smooth.

STEP 2: 

While the sunflowers cook down, chop the lettuce, cucumber, pepper, onion, and tomato.  Layer this in a bowl. 

STEP 3: 

Once everything is ready, drizzle with salad dressing.  Toss before serving.  You can add any vegetables you prefer in this for crunch.

An easy salad filled with fresh veggies is the perfect lunch.  Pair with a protein packed vegan Caesar dressing for the perfect meal.
