BAKLAVA VEGAN CAKE

A moist cake with layers of sweetened nuts and dates is a great "baklava" inspired treat!

This recipe uses:  almond milk, vinegar, applesauce, brown sugar, coconut oil, vanilla, flour, baking powder, salt, almonds, walnuts, dates, cinnamon & agave syrup.

STEP 1: 

Begin by curdling the almond milk, then mix it with the applesauce, brown sugar, coconut oil, and vanilla extract. 

STEP 2: 

Then whisk the dry ingredients together - flour, baking powder, and salt, until no lumps remain. 

STEP 3: 

Combine the wet and dry ingredients for the batter.  Pour half of the thick batter into a prepared baking pan. 

STEP 4: 

Then mix the dates, walnuts, and agave together to create the nut mixture.  Pour half of this on top of the batter in the pan. 

STEP 4: 

Repeat with another layer of cake batter and the last of the nut mixture.  Cover and bake as directed, then uncover and finish baking. 

Drizzle the top with additional syrup before slicing to serve.  Store in an airtight container for up to 4 days at room temperature.
