VEGAN BROCCOLI STIR FRY

Protein packed and flavorful with a homemade sauce, this easy stir fry is the perfect meal for weeknights!

This easy recipe includes:  broccoli, red bell pepper, onions, garlic, mushrooms, red beans, chili pepper, salt, soy sauce, and more

STEP 1: 

Begin by sauteing the onions and bell peppers in oil until tender.  Then add the mushrooms, and cook another 3 to 5 minutes, until browning and reduced.

STEP 2: 

Add the broccoli to the pan with the broth, ginger, garlic, chili flakes, and salt.  Stir to combine and cook, stirring regularly, until tender. 

STEP 3: 

Whisk together the sauce, and add it along with the beans to the skillet or wok.  STir, coating the vegetables in sauce, until all combined. 

Serve the broccoli stir fry over rice or noodles with a sprinkle of sesame seeds.  Can be served alongside other favorite copycat takeout dishes!
