    Broccoli Stir Fry

    One of the great things about stir fry is that it can be customized to suit your taste preferences. Of course, part of that is that it is super easy to ensure it is entirely plant-based. You can use a variety of vegetables, proteins, and sauces to create a stir fry that is uniquely yours. Broccoli stir fry with mushrooms is a great example of this. The combination of the earthy mushrooms and crunchy broccoli creates a satisfying texture that pairs perfectly with rice or noodles.

    This is a perfect recipe to serve alongside a vegan fried rice or vegetable chow mein!

    Ingredients

    Serves: 4

    • 3 tbsp vegetable oil
    • 5 garlic cloves, sliced
    • 1 tsp chili flakes
    • 1 small white onion, chopped
    • 1 tbsp fresh ginger, grated
    • 1 bell pepper, chopped
    • 1lb broccoli florets
    • 1 can red beans, drained and rinsed
    • ⅓ cup vegetable stock
    • 1 cup cremini mushrooms, sliced
    • ½ cup water
    • 3 tbsp soy sauce
    • 2 tbsp rice vinegar
    • 2 tbsp agave syrup
    • 1 tbsp cornstarch

    Kitchen Tools Used:

    • Cutting board: I recommend having at least 2 to 3 different cutting boards.
    • Chef's knife: A quality set of knives is excellent, but don't forget you will need to keep those sharpened.
    • Mixing bowls: Nesting bowls are a great investment since they give you a variety of sizes but also keep the storage space needed to a minimum.
    • Measuring cups and spoons: Always keep a set of measuring spoons, dry measuring cups, and wet measuring cups on hand for accuracy when cooking.
    • Wok or large skillet: While a wok is traditional for stir fry, it is not necessary. You can get a similar result using any larger skillet.

    How to Make Broccoli Stir Fry with Mushrooms

    Video Recipe:

    In a large skillet or wok, add the vegetable oil over medium-high heat setting. Add the onions and bell peppers to the pan, and cook for 3 minutes, stirring constantly. Add the mushrooms and continue cooking for another 3 minutes.

    Then add the broccoli florets and garlic, and then continue cooking for 5 minutes, stirring everything constantly.

    Pour in the chicken stock and red beans and cover then let the mixture steam for 5 minutes. While they are steaming, mix together the sauce. In a bowl, whisk the water, soy sauce, cornstarch, agave syrup, and rice vinegar together.

    Now, add the garlic and chili to the pan, cook for 1 minute, until aromatic, then pour in the sauce mixture

    Continue cooking for another 2 minutes making sure all of the vegetables are coated well. Serve over rice with a sprinkle of sesame seeds on top.

    Frequently Asked Questions

    Is soy sauce vegan?

    While it should be vegan, some brands and manufacturers do add ingredients for a flavor that could contain fish. Before using soy sauce, verify the ingredients in the brand you have on hand.

    You can also substitute soy sauce with coconut aminos if you prefer a similar alternative that is vegan.

    Can I add other vegetables to the stir fry?

    Absolutely! A stir fry is just a method of preparation. This recipe uses a combination of broccoli, onions, garlic, and mushrooms. There are also beans added for protein. You can add any preferred vegetable to the mixture with great results.

    Is it necessary to use a wok to make broccoli stir fry?

    No. While traditional to use a wok, it is not necessary. Just make sure you use a skillet that has even heat and is non-stick for the easiest cooking option.

    Tips for Storing Leftovers

    One of the great things about stir fry is that it can be prepared in advance and reheated later. You can also make this ahead of time and freeze it for later.

    • Can be refrigerated for up to 4 days and reheated in the microwave or on the stove top.
    • If not eaten within 4 days, can be frozen for up to 3 months. It is best to freeze in an airtight storage container that has been dated and labeled.
    • Make sure to allow any leftovers to cool completely before storing in the refrigerator or freezer.

    However, it's important to note that not all stir-fry recipes freeze well. In general, dishes with high water content or delicate ingredients may not hold up well after being frozen and reheated.

    Instructions
