PESTO COUSCOUS SALAD

Packed with fresh flavor and light enough for a lunch or side, this salad is a hit on any vegan table!

Ingredients Needed:  – Couscous – Peas – Zucchini – Vegan feta – Fresh basil – Hemp seeds – Pesto – Fresh mint – Lemon juice – Olive oil – Salt – Black pepper

STEP 1: 

Begin by making the couscous.  Fluff with a fork then season to taste and set this aside. For added flavor, cook in vegetable or mushroom broth. 

STEP 2: 

Next, chop the zucchini into bite-sized pieces and sautee until tender.  Season as desired and set aside. If using frozen peas, steam and set aside.

STEP 3: 

Toast the hemp seeds lightly in oil.  Then, chop the fresh herbs and begin to assemble the salad. 

Layer the couscous, peas, zucchini, herbs, hemp seeds, vegan feta, and pesto together.  Stir until combined before serving.
