VEGAN WEDGE SALAD

This classic salad has an update with tasty coconut bacon and a simple hemp dressing. 

Ingredients Needed:  – Iceberg lettuce – Tomatoes – Walnuts – Red onion – Coconut flakes – Coconut flakes – Soy sauce – Liquid smoke – Maple syrup – Sea salt – Hemp seeds – Lemon juice – Herbs

STEP 1: 

Begin by adding the coconut to a skillet.  Toast this with soy, liquid smoke, maple syrup, and salt until crispy.  Remove and set aside. 

STEP 2: 

In a food processor, combine the hemp seeds, lemon juice, water, dried herbs, salt, and spices.  Pulse until smooth.  Taste and season if needed.

STEP 3: 

Cut the head of lettuce into 4 wedges.  Wash and pat dry.  Then slice the tomatoes, onion, and walnuts into small pieces. 

STEP 4: 

Assemble the salad with a wedge of lettuce, a bit of coconut bacon, walnut pieces, red onions, and tomatoes.  Top with dressing. 

This salad is a perfect starter for any of your favorite meals.  The crispy coconut has a nice smoky bacon flavor you will love.
