VEGAN GREEK PASTA SALAD

Layers of flavor and brightness in this easy vegan pasta salad recipe! A perfect summer lunch. 

Ingredients Needed:  – Cucumber – Cherry tomatoes – Fresh basil – Kalamata olives – Sun-dried tomatoes – Vegan feta – Chickpeas – Rotini pasta – Herbs and spices – Vinegar – Oil

STEP 1: 

Start by cooking the pasta until just al dente.  Rinse well and drain.  Set this aside to add with the remaining ingredients later.

STEP 2: 

While the pasta cooks, chop the cucumber, tomatoes, tofu, and the sun-dried tomatoes.  Set these aside.

STEP 3: 

Rinse and drain the chickpeas then whisk together the dressing in a small bowl.  Taste and add more salt or pepper if desired.

Layer the ingredients together in a large bowl.  Cover with dressing and toss to combine before serving.  Best if chilled at least 1 hour.
