VEGAN SALISBURY STEAK WITH MUSHROOM GRAVY

Simple but flavorful, lentil patties are cooked then covered in a homemade rich mushroom gravy!

INGREDIENTS NEEDED:  – Vital wheat gluten – Breadcrumbs – Lentils – Broth – Soy sauce – Liquid smoke – Olive oil – Salt – Black pepper

STEP 1: 

Drain the lentils, then mash them until mostly pureed with few chunks.  This can be done by hand or in a food processor. 

STEP 2: 

Combine the lentils with the vital wheat gluten, breadcrumbs, soy sauce, and spices.  Mix together until a thick paste forms. 

STEP 3: 

Form 8 to 12 patties from this mixture. If baking, place them on a lined baking tray and cook for 20 minutes until crispy. 

STEP 3a: 

They can also be fried for 3 to 4 minutes per side in a skillet over medium heat if you prefer. Both ways are great, just heat through and brown. 

INGREDIENTS NEEDED:  – Mushrooms – Broth – Olive oil – Garlic – Vegan butter – Flour – Sage – Thyme – Salt – Black pepper

STEP 4: 

Begin the mushroom gravy by sauteeing the mushrooms for 6 to 7 minutes, until they are browned and reduced.  Season and remove from the pan. 

STEP 4: 

Create a roux, then add broth and stir until thickened.  Season and then add the mushrooms back to the skillet and simmer. 

Add the lentil patties to the sauce and serve with your favorite sides!  This is a great make ahead meal that can be frozen for future meals.
