VEGAN LENTIL TACO SALAD

Loaded with flavor, this vegan lentil taco salad includes a homemade cashew sour cream recipe too!

Ingredients Needed:  – Lentils – Chili powder – Garlic – Cumin – Salsa – Smoked paprika – Salt – Black pepper

STEP 1: 

Cook the lentils until tender, then season with chili powder, garlic, cumin, paprika, salt, pepper, and salsa.  Simmer for another 4 minutes. 

STEP 2: 

While the lentils cook, add the cashews, water, lemon juice, and vinegar to a food processor and pulse until creamy and smooth. 

STEP 3: 

Arrange the ingredients into a large bowl with lettuce, rice, corn, onion, tomato, and avocado. Drizzle with oil and cashew sour cream.

Serve this mixed together in one bowl, or let everyone make their own vegan taco salad and customize with their favorite toppings.
